part of the issue is education & training, not just a lack of fundsYeah, you certainly can create a diet around inexpensive healthy ingredients, but very few people do.the stereotypical "cheap" food items are in general far more expensive & worse for you than raw ingredients for much healthier dishes.My favorite examples are whole grains and legumes. Dried beans, chickpeas, lentils, etc... can be obtained in bulk for next to nothing, or canned at big-box food stores for under 70 cents a can. Same with whole grains, from the common brown rice to more uncommon choices like whole wheat, oat or rye groats. Tons of nutrition, yet inexpensive and with a shelf life of months if not years.
